
In the 19th century, the success of the capital's first restaurant — opened by the Duval butchery around its «lesser» cuts and their broth — quickly called for a second. In the 21st, the same thing happened: riding on its popularity, Bouillon Pigalle laid the table again. Good, inexpensive and traditional, at République this time.

In the heart of the 3rd arrondissement, Bouillon République changes tack. How about Fines de Claire oysters, or a whole seafood platter? A proper choucroute? Half a knuckle of ham and chips? In the former Chez Jenny, the youngest of the Bouillon Pigalle family works with its time as much as with its address. Entirely rearranged, the 1,800 m² serve this table on several floors of 450 covers. From the 600 m² of gleaming kitchens to the carefully restored historic fittings — carved woodwork, Charles Spindler marquetry panels, repainted period tiles — by way of the revolving door at the entrance, the thick tufted carpet and the blown glass globe lamps.
