A new-wave bouillon.

In the 18th arrondissement, a stone's throw from the Moulin Rouge and the Sacré-Cœur. Opened in 2017, this XXL brasserie replays, in today's style, the tune of the Parisian restaurants the Duval butchery opened in the 19th century. A past-present-future table, perfectly run and just as welcoming.

In the heart of the 3rd arrondissement, Bouillon République changes tack. How about Fines de Claire oysters, or a whole seafood platter? A proper choucroute? Half a knuckle of ham and chips? A little history

Le Bouillon — Paris, 19th century, a revolution.

At the time, the Duval butchery opened a place serving its «lesser» cuts, cooked every which way, along with their broth — their bouillon. A good menu and a gentle bill made the house a success. A second followed, monumental. Then others still. The bouillon was born.
